  • 4 medium potatoes, peeled and cubed
  • 3 large carrots, sliced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 2 cups shredded cheddar cheese
  • 1 cup beef broth
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, add olive oil and sauté chopped onions and minced garlic until translucent.
  3. Add ground beef to the skillet and cook until browned; drain excess fat.
  4. Stir in paprika, thyme, oregano, salt, and pepper to season the meat mixture.
  5. In a large bowl, combine cubed potatoes, sliced carrots, diced peppers, corn, peas, and the seasoned beef mixture. Pour in the beef broth and stir gently to combine.
  6. Transfer everything into the baking dish and cover with foil. Bake for about 45 minutes or until vegetables are tender.
  7. Remove foil and sprinkle shredded cheddar on top; bake for an additional 10-15 minutes until cheese is melted and bubbly.
  8. Allow resting for about 5 minutes before serving.
