  • 1 can diced tomatoes (15 oz, undrained)
  • 1 can tomato paste (6 oz)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 2 bay leaves
  • 1 tablespoon apple cider vinegar (adds brightness)
  • Fresh parsley (for garnish)

Instructions

  1. Prepare your ingredients by chopping the vegetables.
  2. In a large pot over medium heat, sauté diced onion in olive oil until translucent. Add minced garlic and cook until fragrant.
  3. Add ground beef to the pot and cook until browned.
  4. Stir in chopped cabbage, sliced carrots, and diced celery; sauté for about 5 minutes.
  5. Incorporate diced tomatoes and tomato paste into the pot, followed by beef broth.
  6. Season with salt, pepper, oregano, paprika, thyme, and bay leaves.
  7. Bring to a boil then reduce heat to low; cover and simmer for 25–30 minutes.
  8. Remove bay leaves before serving; garnish with fresh parsley.
