  • 24 oz salmon (cut into 4 portions)
  • 1 cup 2% milk
  • 1 tbsp cornstarch
  • 2 tbsp butter
  • 1 tsp olive oil
  • 2 cloves garlic
  • 2 cups fresh spinach (chopped)
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup sun-dried tomatoes
  • 1/2 cup fresh grated parmesan cheese
  • Salt and pepper to taste
  • Optional: pasta of choice

Instructions

  1. Preheat a nonstick pan over medium heat.
  2. Cut salmon into portions and season as desired.
  3. In the heated pan, add olive oil and butter; then place salmon skin-side down. Cook for about 4-5 minutes on each side until golden brown. Remove from the pan and set aside.
  4. In the same pan, sauté minced garlic until fragrant, then stir in spinach until wilted.
  5. Add cherry tomatoes and sun-dried tomatoes; cook until softened.
  6. Whisk together milk and cornstarch in a bowl until smooth; pour into the pan with vegetables and simmer until thickened.
  7. Gently fold cooked salmon back into the sauce along with parmesan cheese, salt, and pepper.
  8. Serve hot with extra cheese if desired.
