  • 1 green onion (chopped)
  • 2 tbsp carrot (chopped or grated)
  • 1/4 tsp salt
  • 1/8 tsp black or white pepper
  • 1 tsp neutral oil

Instructions

  1. Whisk the eggs in a mixing bowl with salt and pepper until well combined.
  2. Stir in the chopped carrots and green onions until evenly distributed.
  3. Heat a non-stick frying pan over low heat and coat it with neutral oil.
  4. Pour one-third of the egg mixture into the pan, spreading it evenly.
  5. As it cooks, lift the edges to let uncooked egg flow underneath.
  6. When slightly runny on top, roll the omelette from one side using a spatula.
  7. Move the rolled omelette to one side and add another third of the mixture to fill the empty space.
  8. Repeat rolling until all egg mixture is cooked and rolled together.
  9. Let rest briefly before slicing into pieces for serving.
