  • 3 cups cooked long-grain rice (preferably day-old)
  • 2 tablespoons vegetable oil
  • 1 medium onion (diced)
  • 2 carrots (peeled and diced)
  • 1 cup frozen peas
  • 2 cloves garlic (minced)
  • 2 large eggs (lightly beaten)
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1/4 teaspoon white pepper
  • 2 green onions (thinly sliced)

Instructions

  1. Prep your ingredients by chopping vegetables and measuring seasonings.
  2. Heat 1 tablespoon of oil in a large wok over medium-high heat. Cook the ground chicken until browned (5–7 minutes).
  3. Push chicken aside, add remaining oil, and sauté onions and carrots for 2–3 minutes.
  4. Scramble the eggs in the empty side of the pan for about 1–2 minutes before mixing everything together.
  5. Add rice, breaking up clumps while stirring for about 3–4 minutes.
  6. Pour in soy sauce and sesame oil, add peas, and cook for another 2–3 minutes until heated through.
  7. Garnish with white pepper and sliced green onions before serving.
