  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 2 medium zucchinis, sliced
  • 1 cup uncooked quinoa, rice, or farro
  • 1/2 cup sour cream or Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt, to taste
  • 1 tablespoon chopped fresh parsley or chives
  • Splash of fresh lemon juice (optional)

Instructions

  1. Bring the steak to room temperature and season with olive oil, salt, pepper, garlic powder, and smoked paprika.
  2. Preheat the grill or grill pan over high heat. Toss zucchini slices in olive oil and grill for 2-3 minutes per side until charred.
  3. Grill the seasoned steak for 4-5 minutes on each side until cooked to your liking. Allow it to rest before slicing thinly.
  4. Cook quinoa (or rice) according to package instructions and fluff with a fork.
  5. In a bowl, combine sour cream (or Greek yogurt), Dijon mustard, garlic powder, smoked paprika, salt, parsley (or chives), and lemon juice if using; mix until smooth.
