  • 14 ounces green enchilada sauce
  • 3 cups shredded rotisserie chicken
  • 6 burrito-sized flour tortillas
  • 2 cups shredded cheese (sharp cheddar and Monterey Jack)
  • ¼ cup sour cream
  • 4 ounce can mild diced green chiles, drained
  • ½ teaspoon salt
  • Freshly ground black pepper, to taste
  • ¼ cup thinly sliced green onions

Instructions

  1. Preheat the oven to 350°F and spray a baking dish with non-stick cooking spray.
  2. In a saucepan, heat vegetable oil over low heat and whisk in flour until golden brown. Gradually add chicken broth and enchilada sauce; simmer until thickened.
  3. In a bowl, combine shredded chicken, sour cream, diced green chiles, and cheese; season with salt and pepper.
  4. Warm tortillas in the microwave for easier rolling. Fill each tortilla with about half a cup of filling, fold edges inward, and roll tightly.
  5. Place burritos seam-side down in the baking dish. Pour sauce over the top, cover with foil, and bake for 20 minutes.
