  • 0.5 oz dried mushrooms
  • 1 cup Gruyere cheese
  • 2 cups half and half or cream
  • 3 large shallots
  • 0.33 cup apple juice
  • 3 tbsp butter
  • 3 tbsp flour

Instructions

  1. Prepare the crispy shallots by frying thinly sliced shallots coated in flour until golden brown.
  2. Blanch fresh green beans in salted boiling water for 5 minutes, then drain.
  3. In a saucepan, create a roux with butter and flour; gradually whisk in half and half until thickened. Stir in dried mushrooms, apple juice, salt, pepper, and nutmeg.
  4. Combine cooked green beans with the sauce and half of the shredded Gruyere cheese. Pour into a baking dish and top with the remaining cheese and fried shallots.
  5. Bake at 350°F for 30 minutes until bubbly and golden.
