  • 3 cloves garlic
  • 1 red bell pepper
  • 1 zucchini
  • 2 cups fresh spinach leaves
  • 1 cup uncooked orzo pasta
  • 2 cups chicken broth
  • Juice of 1 lemon
  • 1/2 cup crumbled feta cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat olive oil over medium-high heat. Brown the seasoned chicken pieces for about 5-6 minutes and set aside.

  5. Add uncooked orzo, chicken broth, and lemon juice; mix well.
