  • 1/2 cup white sugar
  • 1 packet instant yeast
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cup milk
  • 2 eggs (room temperature)
  • 1/3 cup butter (melted then cooled slightly)
  • 2 teaspoons vanilla
  • ~ 1/4 cup GF all-purpose flour for rolling the dough
  • 6 tablespoons softened butter (dairy free or regular)
  • 3/4 cup white sugar
  • 2 tablespoons cinnamon
  • 1/4 cup melted butter
  • 4 ounces cream cheese
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a greased 9×13 baking pan.
  2. In a stand mixer, combine the gluten-free bread mix, instant yeast, white sugar, baking powder, and salt. Mix on low.
  3. Warm milk in the microwave until it feels like bath water, then add it to the dry ingredients along with melted butter, eggs, and vanilla. Mix until smooth.
  4. Knead the dough for about 5 minutes until well combined.
  5. Roll out dough on a floured surface into a rectangle (12×15 inches). Brush melted butter over it and sprinkle with a mixture of cinnamon and sugar.
  6. Slice into strips and roll each strip into a roll shape. Place them in the prepared baking pan.
  7. Cover with plastic wrap and let rise for about an hour until puffy.
  8. Bake for 22-28 minutes until golden brown.
  9. While baking, prepare the glaze by whisking melted butter with cream cheese, powdered sugar, and vanilla until smooth.
  10. Allow rolls to cool slightly before drizzling with glaze.
