  • 2 lbs boneless, skinless chicken thighs
  • 6 garlic cloves, thinly sliced
  • 3-inch piece ginger, peeled and finely chopped
  • 1 bundle scallions (whites and greens separated)
  • 10 cups water
  • 8 oz dried ramen-style noodles
  • 1 cup sliced carrots
  • ¼ cup black rice vinegar
  • ¼ cup soy sauce
  • 2 tbsp toasted sesame oil
  • crispy chili oil (to taste)

Instructions

  1. In a large pot, bring chicken thighs, sliced garlic, chopped ginger, scallion whites, salt, pepper, and water to boil. Reduce heat to medium-low and simmer uncovered for about 15 minutes until chicken is tender.
  2. While the soup simmers, whisk together black rice vinegar, soy sauce, and toasted sesame oil in a bowl. Add crispy chili oil according to taste.
  3. Remove cooked chicken and place it on a cutting board. Add noodles and sliced carrots to the broth based on noodle package cooking time.
  4. Shred the chicken into bite-sized pieces using two forks. Once noodles are cooked, return shredded chicken to the pot and warm for 1 minute.
  5. Serve soup in bowls topped with scallion greens and drizzle with sauce mixture.
