  • 1 cucumber (julienned)
  • 1 large red pepper (julienned)
  • ½ cup cilantro (chopped)
  • 1 cup red cabbage (shredded)
  • ½ cup green onion (finely sliced)
  • 1 avocado (sliced)
  • 1 cup edamame (shelled)
  • 8 ounces vermicelli noodles (or brown rice noodles)
  • 12 spring roll wrappers
  • Peanut sauce for dipping

Instructions

  1. Cook vermicelli noodles according to package instructions. Drain and rinse under cold water to cool.
  2. Prepare all filling ingredients by julienning the vegetables, chopping onions, cabbage, and cilantro.
  3. Set up a rolling station with moist tea towels on your counter and serving dish.
  4. Soak one spring roll wrapper in warm water for about 8-10 seconds until softened.
  5. Lay the wrapper on a towel; layer with noodles, cilantro, green onions, crushed peanuts, and your vegetable mix.
  6. Fold the edges over the filling and roll tightly from the bottom up until fully wrapped.
  7. Repeat until all ingredients are used.
  8. Serve immediately with peanut sauce.
