  • 810 small/medium Yukon Gold potatoes (peeled)
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly cracked black pepper
  • 2 tablespoons avocado oil
  • 3 tablespoons unsalted butter
  • 3 cloves garlic
  • 2 sprigs fresh thyme
  • 1 sprig fresh rosemary
  • 1 cup vegetable broth
  • Flaky sea salt (for serving)

Instructions

  1. Preheat your oven to 450°F.
  2. Cut off both ends of each potato to create flat surfaces and season with salt and pepper.
  3. Heat avocado oil in a cast iron skillet over medium-high heat. Sear potatoes flat side down until golden brown (5 minutes), then flip and brown the other side (3-4 minutes). Drain excess oil.
  4. Add butter, garlic, thyme, and rosemary to the skillet. Pour vegetable broth around the edges.
  5. Transfer the skillet to the oven and bake for 25-30 minutes until tender when pierced with a fork.
  6. Serve topped with flaky sea salt and drizzled with butter sauce from the pan.
