  • 4 cups corn kernels (fresh or frozen)
  • 1/2 cup mayonnaise
  • 2 tablespoons unsalted butter
  • 2 tablespoons lime juice
  • 1/2 cup cotija cheese (or feta)
  • Chili powder
  • Smoked paprika
  • Salt & pepper
  • Fresh cilantro (optional)

Instructions

  1. In a large skillet over medium heat, melt the butter. Add corn kernels and cook for about 10-12 minutes until heated through and slightly charred.
  2. Transfer corn to a mixing bowl. Stir in mayonnaise and lime juice until evenly coated.
  3. Mix in half of the cotija cheese, chili powder, smoked paprika, salt, and pepper.
  4. Spoon into individual cups or bowls and top with remaining cotija cheese and a sprinkle of chili powder.
  5. Garnish with fresh cilantro if desired and serve immediately with lime wedges.
