  • 4 medium sweet potatoes
  • 1 lb lean ground turkey
  • 2 cloves garlic (minced)
  • 1 cup canned diced tomatoes
  • 1 medium zucchini (grated)
  • 1 large handful of spinach (chopped)
  • 1 cup black beans (optional)
  • 1 cup corn kernels (optional)
  • 1 cup cheddar cheese (shredded)
  • Salsa and plain Greek yogurt for topping

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash sweet potatoes, pierce with a fork, drizzle with oil, season with cumin, salt, and pepper, then bake for 25–30 minutes until soft.
  3. In a skillet over medium heat, sauté garlic in olive oil until fragrant. Add ground turkey seasoned with salt, pepper, cumin, paprika, oregano, and chili powder; cook until browned.
  4. Mix in diced tomatoes, zucchini, spinach, and optional black beans and corn; heat through.
  5. Once sweet potatoes are baked, cut them open lengthwise and fluff the insides before stuffing with the turkey mixture.
  6. Top each potato with cheddar cheese, green onions, salsa, and a dollop of Greek yogurt.
