  • 3/4 cup reduced fat Greek yogurt
  • 2 tablespoons freshly squeezed lemon juice
  • 3 cloves garlic, minced
  • 1 medium cucumber, chopped
  • 4 cups shredded rotisserie chicken
  • 6 cherry tomatoes, quartered
  • 1/2 medium onion, chopped
  • 3 oz feta cheese, crumbled
  • 1/4 cup kalamata olives, chopped
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons parsley, chopped
  • Kosher salt, to taste
  • 6 pitas

Instructions

  1. In a large mixing bowl, combine 3/4 cup reduced fat Greek yogurt, 2 tablespoons freshly squeezed lemon juice, and 3 minced garlic cloves. Mix well to create the tzatziki dressing.
  2. Add 1 medium chopped cucumber, 4 cups shredded rotisserie chicken, 6 quartered cherry tomatoes, 1/2 chopped onion, 3 oz crumbled feta cheese, 1/4 cup chopped kalamata olives, 2 tablespoons chopped fresh dill, and 2 tablespoons parsley into the bowl. Gently mix until everything is coated in the dressing.
  3. Season with kosher salt to taste and chill in the fridge for at least 30 minutes to allow flavors to meld.
  4. Serve in pita bread or as desired.
