  • 2 cups long-grain white or brown rice
  • 2 cups chicken broth
  • 1.5 lbs boneless skinless chicken breast or thighs
  • 1 tablespoon olive oil
  • 1 medium onion (sliced)
  • 1 red bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 packet fajita seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the rice and chicken broth.
  3. Heat olive oil in a skillet over medium heat and sauté the onion and bell peppers until softened (about 5-7 minutes).
  4. In a baking dish, layer half of the rice mixture on the bottom, followed by sautéed vegetables and chicken pieces sprinkled with fajita seasoning. Top with remaining rice mixture.
  5. Add shredded cheese on top, cover with foil, and bake for 30 minutes.
  6. Remove foil and bake for an additional 15 minutes until cheese is melted and bubbly.
