  • 1 lb ground beef
  • 1/4 cup butter
  • 1/4 cup diced onion
  • 2 sticks diced celery
  • 6 tablespoons flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 lb Yukon potatoes (peeled & diced)
  • 2 cups shredded sharp cheddar cheese
  • Salt & pepper to taste

Instructions

  1. In a soup pot over medium-high heat, brown the ground beef until fully cooked. Drain excess fat.
  2. Melt butter in the same pot and sauté diced onion and celery for about 4-5 minutes until soft.
  3. Add minced garlic and flour; stir for about 2 minutes.
  4. Gradually whisk in chicken broth until smooth and simmer.
  5. Stir in heavy cream, diced potatoes, and cooked beef. Simmer until potatoes are tender.
  6. Remove from heat and mix in shredded cheddar cheese until melted. Adjust consistency with more broth if needed.
  7. Season with salt and pepper to taste before serving.
