  • 1 cup cottage cheese (4% Good Culture or similar)
  • 4 large eggs
  • ½ cup rolled oats (blended into oat flour)
  • 1 scoop (30g) vanilla protein powder
  • 1 cup blueberries (fresh or frozen)
  • 23 Tbsp maple syrup
  • 1 tsp lemon juice
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • 1 tsp baking powder

Instructions

  1. Preheat your oven to 350°F and lightly grease an 8×8” baking dish.
  2. Blend the rolled oats in a food processor until they turn into fine oat flour.
  3. In a blender or mixing bowl, combine cottage cheese, eggs, maple syrup, vanilla extract, lemon juice, and protein powder; blend until smooth.
  4. Stir in the blended oat flour, cinnamon, baking powder, and salt until fully combined.
  5. Gently fold in the blueberries to maintain their shape.
  6. Pour the batter into the greased baking dish and spread evenly.
  7. Bake for about 35–40 minutes until golden edges form and the center is set.
  8. Let cool slightly before slicing and serving.
