  • 1 lb chow mein noodles (fresh)
  • 2 cups cabbage (thinly sliced)
  • 1 cup celery (sliced)
  • 1 small onion (sliced)
  • 2 tbsp vegetable oil
  • 2 tbsp soy sauce
  • 1/2 tbsp dark soy sauce
  • 2 tbsp vegetarian stir fry sauce
  • 1 tbsp sesame oil
  • 2 garlic cloves (minced)
  • 1/4 cup chicken stock (or cold water)
  • 1/2 tbsp cornstarch

Instructions

  1. In a small bowl, mix together the soy sauces, vegetarian stir fry sauce, sesame oil, garlic, chicken stock, and cornstarch. Set aside.
  2. Bring a large pan of water to boil on medium-high heat. Blanch the chow mein noodles for 20-30 seconds until loosened; drain without rinsing.
  3. Heat vegetable oil in a large pan over medium heat and sauté the onions, cabbage, and celery for about 1 minute until softened.
  4. Push vegetables to one side of the pan. Add more oil if needed, then add the noodles and prepared sauce.
  5. Toss everything together until the noodles are well-coated in sauce. Remove from heat and serve hot.
