  • 1 can (13.5 fl oz / 400ml) coconut milk
  • 23 tablespoons red curry paste
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or sugar
  • 1 teaspoon sesame oil
  • 1 large garlic clove
  • 1 small cube of ginger
  • 1620 frozen dumplings of choice
  • 2 bok choy bulbs
  • 1 zucchini or any vegetable of choice
  • Garnish ideas – sesame seeds, sliced green onions, chili crisp oil
  • Serve with white jasmine rice or noodles

Instructions

  1. Preheat oven to 400°F (200°C). In a large baking dish, whisk together coconut milk, red curry paste, soy sauce, rice vinegar, honey, sesame oil, grated garlic, and ginger until smooth.
  2. Chop bok choy and slice zucchini; add to the baking dish and stir to coat veggies in the broth.
  3. Arrange frozen dumplings on top without overlapping; press lightly into the broth. Cover with foil.
  4. Bake covered for 20 minutes, then remove foil and bake for an additional 5-10 minutes until bubbly and slightly crisped on top.
  5. Garnish with sesame seeds or green onions before serving over jasmine rice or noodles.
