  • 3 pounds beef chuck roast
  • 3 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 onion
  • 4 garlic cloves
  • 1 can diced tomatoes (14.5 ounces)
  • 2 cups beef broth
  • Corn tortillas
  • Fresh cilantro and diced onion for garnish

Instructions

  1. Soak the dried chilies in hot water for 15 minutes. Blend with onion, garlic, and tomatoes until smooth.
  2. Place the beef in the crockpot and pour the chili mixture over it.
  3. Add the beef broth along with vinegar, oregano, cumin, bay leaves, salt, and pepper.
  4. Cook on low for 8-10 hours until the beef is tender.
  5. Shred the beef using forks and mix back with the sauce.
  6. Fry tortillas in oil until crispy; fill each tortilla with the beef mixture and serve topped with fresh cilantro and diced onion.
