  • 1 block extra firm tofu
  • 1 large carrot
  • 1/4 napa cabbage
  • 1 cup shiitake mushrooms
  • 3 garlic cloves
  • 1 inch ginger
  • 1/4 cup soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • 1 tsp sesame oil
  • Salt and pepper to taste
  • 16 rice paper sheets

Instructions

  1. Finely chop the carrot, cabbage, mushrooms, garlic, and ginger using a food processor or knife. Drain and dry the tofu.
  2. In a hot oiled frying pan, add the chopped veggies and crumble the tofu into the pan. Cook for a few minutes until heated through.
  3. Stir in soy sauce, rice vinegar, sugar, sesame oil, salt, and pepper; cook for another 2-3 minutes.
  4. Allow the filling to cool before wrapping.
  5. Soak one rice paper sheet in water for just 1-2 seconds until pliable.
  6. Place a scoop of filling in the center of the soaked rice paper and fold it into a pocket shape. For sturdiness, wrap another soaked sheet around it.
  7. Repeat until all filling is used.
  8. Fry in hot oil until golden brown and crispy.
