  • 2x 250g/9oz Chicken Breasts
  • 1/3 cup / 110g Honey
  • 1 1/2 tsp Hot Sauce
  • 3/4 tsp Chilli Flakes
  • 2 tsp Paprika
  • 1 tsp Salt
  • 1/2 tsp EACH: Onion Powder, Garlic Powder, Dried Oregano, Black Pepper
  • 1/4 tsp Cayenne Pepper
  • 35g / 1/4 cup Plain Flour
  • 2 Eggs (beaten)
  • 65g / 1 cup Panko Breadcrumbs
  • Vegetable Oil (as needed (6-8 tbsp))
  • 200g / 7oz Feta (crumbled)

Instructions

  1. Prepare the hot honey sauce by mixing honey, hot sauce, and chili flakes in a bowl; warm slightly and set aside.
  2. Slice chicken breasts horizontally to create thinner pieces. Season with spices.
  3. Set up a dredging station: flour in one dish, beaten eggs in another, and seasoned Panko breadcrumbs in a third.
  4. Dredge each chicken piece in flour, egg, then breadcrumbs until well-coated.
  5. Heat vegetable oil in a large pan over medium-high heat. Fry chicken pieces until golden brown on both sides.
  6. Top fried chicken with crumbled feta cheese and broil until the feta is golden.
  7. Drizzle hot honey sauce over the chicken before serving.
