  • 2 teaspoons olive oil
  • Juice of half a lemon
  • 1 small head green cabbage, thinly sliced and chopped
  • 1 cucumber, finely diced
  • 15 oz white beans, rinsed and drained
  • 3 green onions, sliced
  • 1/2 cup chopped basil
  • 1/2 cup chopped Italian parsley
  • 1/4 cup olive oil
  • 2 to 3 tablespoons lemon juice
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Kosher salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Drain and pat dry the artichokes; spread them on a baking sheet.
  3. Drizzle with olive oil and lemon juice, then roast for 10-15 minutes until crispy.
  4. In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, minced garlic, salt, and pepper for the dressing.
  5. In a large bowl, combine sliced cabbage, diced cucumber, white beans, green onions, chopped herbs, and roasted artichokes.
