  • 2 cups grilled or roasted corn
  • 4 ounces cream cheese
  • 1/3 cup sour cream
  • 3/4 cup crumbled cotija or feta cheese
  • 1 avocado, diced
  • Fresh herbs (basil and cilantro)
  • Lime juice
  • Salt and pepper to taste
  • 2 tablespoons extra virgin olive oil
  • 12 grated garlic cloves
  • 1 tablespoon fresh chives, chopped
  • 4 tablespoons salted butter
  • 2 teaspoons smoked paprika
  • 2 tablespoons chili powder
  • 1/2 to 2 teaspoons cayenne pepper, adjust to preference
  • 1/4 cup mayonnaise or yogurt

Instructions

  1. Cook the pasta in boiling salted water according to package instructions until al dente. Drain and set aside.
  2. In a large mixing bowl, blend cream cheese and sour cream until smooth. Stir in olive oil, garlic, chives, salt, and pepper.
  3. Gently fold the cooked pasta into the dressing mixture. Add shredded romaine lettuce and grilled corn.
  4. Incorporate torn basil and chopped cilantro into the salad.
  5. Mix in crumbled cotija or feta cheese and drizzle with melted butter mixed with spices.
  6. Just before serving, fold in diced avocado and drizzle lime juice over the top.
