  • 1 pound boneless skinless chicken breasts or thighs
  • 1 cup chopped onions
  • 3/4 cup chopped celery
  • 3/4 cup chopped carrots
  • 45 cloves minced garlic
  • 6 cups low-sodium chicken stock
  • 2 cups milk
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 1/2 cup all-purpose flour
  • 2 tablespoons salt-free seasoning blend

Instructions

  1. Rinse the wild rice under cold water.
  2. Chop onions, celery, carrots, and mince garlic.
  3. In your slow cooker, combine wild rice, chicken, onions, celery, carrots, garlic, chicken stock, and seasonings.
  4. Cook on high for 3–4 hours or low for 7–8 hours until chicken is cooked through.
  5. Shred the chicken in the last half hour of cooking and return it to the pot.
  6. In a saucepan, melt butter with olive oil; whisk in flour followed by milk until creamy.
  7. Stir the creamy mixture into the soup before serving. Adjust seasoning as needed.
