  • 2 boneless skinless chicken breasts (cut into bite-sized strips)
  • 1214 ounces linguine or spaghetti
  • 2 cloves garlic (very finely grated)
  • 4 eggs (2 yolk only, 2 whole)
  • 3/4 cup grated Parmesan cheese
  • Salt and freshly cracked pepper (to taste)
  • Optional: 1/3 cup heavy cream
  • 12 tablespoons chopped fresh basil

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente. Reserve 1/2 cup of pasta water before draining.
  2. In a mixing bowl, whisk together eggs, Parmesan cheese, salt, pepper, and optional heavy cream until smooth.
  3. In a skillet over medium heat, cook sliced chicken seasoned with salt and pepper until fully cooked through. Add garlic in the last minute of cooking.
  4. Lower heat and combine cooked pasta with chicken and reserved bacon. Pour in the egg mixture along with some reserved pasta water; toss until well coated.
  5. Serve immediately topped with fresh basil and extra Parmesan cheese.
