  • 3/4 cup brown sugar
  • 1/3 cup half and half
  • 1/4 cup butter, melted
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon salt
  • 3/4 cup chopped pecans
  • 1/2 cup flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Instructions

  1. Preheat oven to 350°F and prepare a medium baking dish with non-stick spray.
  2. Boil peeled and cubed sweet potatoes until tender (about 14-18 minutes). Drain and transfer to a mixing bowl.
  3. Mash the sweet potatoes and stir in brown sugar, half and half, melted butter, egg, vanilla, and salt until smooth.
