  • 4 pounds beef chuck roast
  • 4 chipotle peppers in adobo sauce
  • 4 ounces diced green chiles
  • 1 large sweet onion
  • 2 tablespoons white grape juice vinegar
  • 2 limes (juiced)
  • 3/4 cup chicken broth
  • salt and pepper (to taste)
  • 1 tablespoon cumin
  • 2 teaspoons chili powder
  • 1/4 teaspoon ground cloves
  • 2 teaspoons dried oregano
  • 3 bay leaves
  • 5 cloves of garlic (smashed)
  • olive oil (for cooking)

Instructions

  1. Season the beef chunks with salt and pepper. Sear them in a cast iron skillet over medium-high heat until browned on all sides (about 3-4 minutes per side).
  2. Transfer the seared beef into a slow cooker. Add chipotle peppers, diced green chiles, diced onion, vinegar, lime juice, spices, chicken broth, bay leaves, and smashed garlic.
  3. Cook on low for 7-8 hours until meat is tender and easy to shred.
  4. Remove the beef from the slow cooker and shred it using two forks.
