  • 3 large onions, sliced
  • 1 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 8 ounces baby bella mushrooms
  • 1 tablespoon flour
  • 1/4 cup beef stock
  • 2 teaspoons fresh thyme leaves, divided
  • 5 ounces Cooper® Sharp White cheese, diced
  • 1 refrigerated (rolled) pie crust, at room temperature
  • 1 egg
  • 1 teaspoon water

Instructions

  1. Melt butter in a sauté pan over medium heat. Add sliced onions and season with salt and pepper; cook until caramelized (20-25 minutes).
  2. Stir in mushrooms; continue cooking until golden brown.
  3. Sprinkle flour over the mixture and cook for an additional minute.
  4. Pour in beef stock and add thyme; stir until thickened.
  5. Mix in 3/4 of the cheese; set aside to cool slightly.
  6. Preheat oven to 400°F (200°C) and prepare the pie crust on a lined baking sheet.
  7. Heap the cooled onion mixture in the crust center, fold edges up and over, leaving the center open.
  8. Top with remaining cheese, brush edges with egg wash, then bake for 24-26 minutes until golden.
