  • 4 medium sweet potatoes
  • 1/4 cup real maple syrup
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 cup heavy cream
  • 6 tablespoons salted butter (divided)
  • 2 eggs
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 cup raw walnuts (finely chopped)

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a 9×13 inch baking dish.
  2. Poke holes in the sweet potatoes; bake for about 1 hour until tender. Allow cooling slightly, then reduce the oven temperature to 350°F (175°C).
  3. Peel and mash the sweet potatoes in a mixing bowl; stir in maple syrup, vanilla extract, cinnamon, cream, melted butter, and eggs until smooth.
  4. For the streusel topping, combine flour, brown sugar, and cinnamon; mix in cold butter until crumbly. Stir in maple syrup and walnuts.
  5. Layer half of the sweet potato mixture in the baking dish; sprinkle with one-third of the streusel. Add the remaining sweet potato mixture and top with remaining streusel.
  6. Bake for 30–40 minutes until golden brown on top.
