  • 1 1/2 cup brown sugar
  • 1 egg
  • 1 cup buttermilk (or 1 cup fresh milk with 1 teaspoon lemon juice or vinegar in it)
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups rhubarb cut into 1/2 inch pieces
  • 1/4 cup white sugar
  • 1 teaspoon cinnamon
  • 1/2 cup pecans, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together butter and brown sugar until smooth. Add egg and mix well. Gradually incorporate buttermilk until blended.
  3. Add flour in increments, mixing thoroughly after each addition, then stir in salt and baking soda. Gently fold in chopped rhubarb.
  4. Divide batter evenly between two greased 6-inch bread pans.
  5. In a separate bowl, mix white sugar, cinnamon, and chopped pecans for the streusel topping; sprinkle over the batter in both pans.
  6. Bake for 30–40 minutes or until a toothpick comes out clean from the center. Cool for 5 minutes before transferring to a wire rack to cool completely.
