  • 4 large eggs
  • 1/2 cup granulated sugar
  • 2 1/2 cups whole milk
  • 1/2 cup heavy cream
  • 2 teaspoons vanilla extract

  • 1/4 teaspoon salt
  • 2 tablespoons cornstarch
  • 3 tablespoons butter, softened

Instructions

  1. Preheat oven to 425°F (220°C). Prepare the pie crust by pressing it into a pie pan and blind bake for 12 minutes with weights, then an additional 5 minutes without.
  2. In a mixing bowl, whisk eggs and sugar until pale.
  3. Heat milk and cream in a saucepan until small bubbles appear at the edges.
  4. Mix cornstarch with some hot milk until smooth; temper eggs by gradually adding the hot mixture.
  5. Strain into a bowl, add vanilla, cinnamon, salt, and butter; mix well.
  6. Pour into pre-baked crust and bake at 350°F (175°C) for 35–40 minutes or until slightly jiggly in the center.
  7. Cool completely on a wire rack and refrigerate for at least 3 hours before serving. Dust with cinnamon before serving.
