  • 1 3/4 cups all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1.5 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp vanilla essence

  • 2 eggs
  • 7 tbsp unsalted butter, melted
  • 10 oz dark chocolate, coarsely chopped

  1. Preheat your oven to 350°F (180°C). Grease and line a loaf pan.
  2. Drain the grated zucchini in a colander to remove excess moisture.
  3. In a large bowl, whisk together flour, cocoa powder, baking soda, and salt.
  4. In another bowl, mix eggs and sugar until smooth; add melted butter and vanilla essence.
  5. Combine wet and dry ingredients until just mixed; fold in drained zucchini and chopped chocolate.
  6. Pour batter into prepared pan and bake for about 45 minutes; cover with foil and continue baking for another 20 minutes until a skewer comes out clean.
  7. Cool in the pan for 15 minutes before transferring to a rack.
