  • 2 Tbsp black cocoa powder (14g)
  • 1 tsp ground cinnamon (3g)
  • 1/4 cup unsalted butter, softened (56g)
  • 3 1/4 cups all-purpose flour + up to 1/2 cup additional flour (406-500g)
  • 1/2 cup unsweetened cocoa powder, sifted (50g)
  • 2 tsp instant dry yeast (7g)
  • 1 tsp fine salt (6g)
  • 1 tsp instant espresso or coffee (2g)
  • 1 cup whole milk (240ml)
  • 1/2 cup granulated sugar (100g)
  • 1 large egg, room temperature (56g)
  • 1/4 cup unsalted butter, room temperature (56g)
  • 2/3 cup milk or dark chocolate chips (120g)
  • 3 Tbsp whole milk (45ml)
  • 1 cup powdered sugar (125g)
  • 1 tsp vanilla extract or vanilla bean paste (4ml)

Instructions

  1. Prepare the filling by mixing light brown sugar, black cocoa powder, and ground cinnamon in a bowl.
  2. To make the dough, combine all-purpose flour, unsweetened cocoa powder, instant dry yeast, instant coffee, and fine salt in a large bowl. Heat whole milk with granulated sugar and softened butter until warm; then mix into the dry ingredients along with one egg until a sticky dough forms. Let rest for 15 minutes after kneading.
  3. Roll out the dough into a rectangle and spread softened butter over it. Evenly sprinkle the prepared filling and roll tightly into a log; cut into nine equal pieces.
  4. Allow rolls to rise in a warm place for about 30 minutes before baking at 350°F (175°C) for 26-32 minutes.
  5. For frosting, melt chocolate chips with whole milk and powdered sugar until smooth; drizzle over cooled rolls.
