  • 4 cloves minced garlic
  • 1 Fresno pepper, seeded and minced
  • 1 tsp dried oregano
  • 1/2 cup extra virgin olive oil
  • 3 tbsp apple vinegar
  • 1 lb jumbo shrimp, peeled and deveined
  • 3 tbsp olive oil (for marinating)
  • 2 cloves minced garlic (for marinating)
  • 2 tbsp honey
  • 1 tsp smoked paprika

Instructions

  1. In a mixing bowl, combine parsley, garlic, Fresno pepper, oregano, olive oil, apple vinegar, salt, and pepper to make the chimichurri sauce.
  2. In another bowl, mix jumbo shrimp with olive oil, minced garlic, honey, smoked paprika, salt, and pepper. Marinate for about 10 minutes.
  3. Preheat your grill or grill pan over medium-high heat. Grill the marinated shrimp for about 2-3 minutes on each side until opaque.
  4. Serve immediately with chimichurri sauce drizzled on top or on the side.
