  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 medium zucchinis, sliced into half-moons
  • 1 red bell pepper, sliced
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon hoisin sauce
  • 1 teaspoon rice vinegar
  • Salt and pepper to taste
  • 1 tablespoon cornstarch (optional for thickening)
  • Sesame seeds
  • Green onions, chopped
  • Red pepper flakes (if you like heat)

Instructions

  1. Prepare all ingredients by washing and cutting the vegetables: slice zucchini, chop bell pepper and onion, and mince garlic.
  2. In a large skillet or wok, heat olive oil over medium-high heat. Add chicken pieces seasoned with salt and pepper; cook until golden brown (about 5-7 minutes).
  3. Push chicken to one side; add zucchini, bell pepper, onion, and garlic to the empty space. Stir-fry for about 3-4 minutes until vegetables are tender yet crisp.
  4. In a bowl, whisk together soy sauce, hoisin sauce, rice vinegar, and optional cornstarch for thickening. Pour over the chicken and vegetables.
  5. Combine everything well; cook for an additional 2-3 minutes until the sauce slightly thickens. Serve garnished with sesame seeds and green onions.
