  • 500g spaghetti or other long pasta
  • 500g skinless boneless chicken thighs
  • 500g mushrooms, sliced
  • 2 cups milk
  • 1 cup cream
  • 2 cups low-sodium chicken stock
  • 4 tbsp butter
  • 2 cups shredded cheese (cheddar, jack, or colby)

Instructions

  1. Sear the chicken: Melt 2 tbsp butter in a large pot over high heat. Cook seasoned chicken thighs until golden brown; remove and set aside.
  2. Prepare the sauce: In the same pot, melt 4 tbsp butter and sauté sliced mushrooms until softened. Add minced garlic and chopped onion; cook until golden.
  3. Thicken the sauce: Stir in flour, then gradually add milk and chicken stock while stirring until thickened. Mix in cream and half the cheese until melted.
  4. Combine: Fold in cooked pasta and chopped chicken into the sauce mixture.
  5. Bake: Transfer to a baking dish, top with remaining cheese, and bake at 160°C / 325°F for about 25 minutes until bubbly.
