  • 1 pound boneless, skinless chicken breasts, sliced
  • 2 tablespoons vegetable oil
  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 3 green onions, sliced
  • 1/2 cup soy sauce (or tamari for gluten-free)
  • 1/4 cup honey or maple syrup
  • 2 tablespoons rice vinegar
  • 2 teaspoons cornstarch mixed with water

Instructions

  1. Cook the noodles according to package instructions; drain and set aside.
  2. In a wok or large skillet, heat vegetable oil over medium-high heat. Sauté the chicken until fully cooked and browned; remove from the pan.
  3. Stir-fry the bell peppers, broccoli, carrot, and green onions in the same pan for about 5 minutes.
  4. Mix soy sauce, honey (or maple syrup), rice vinegar, garlic, ginger, and cornstarch mixture in a bowl; pour into the pan with vegetables and cook until thickened.
  5. Add chicken and drained noodles back into the pan; toss everything together until well-coated.
