  • 2 tablespoons cooking oil
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 2 cups cooked chicken, cubed or shredded
  • 15-ounce can black beans, drained and rinsed
  • 15-ounce can corn, drained
  • 10-ounce can diced tomatoes with green chilies, drained, reserving ¼ cup of liquid
  • 1 packet taco seasoning
  • 1 teaspoon garlic salt
  • 1¼ cups sour cream or Greek yogurt
  • 2 cups shredded Colby Jack cheese
  • 1 cup crushed tortilla chips
  • Optional garnish: chopped fresh cilantro

Instructions

  1. Preheat oven to 350°F and grease a baking dish.
  2. In a skillet, heat oil over medium heat. Sauté onion and bell pepper until softened.
  3. Add chicken, black beans, corn, diced tomatoes, taco seasoning, and garlic salt; cook for about 5 minutes.
  4. Remove from heat and stir in sour cream and half a cup of cheese.
  5. Spread the mixture in the baking dish; top with crushed tortilla chips and remaining cheese.
  6. Bake for 25-30 minutes until cheese is melted.
