  • 1 tablespoon vegetable or peanut oil
  • 1 1/2 lbs boneless, skinless chicken breasts (sliced into bite-sized pieces)
  • 1 teaspoon salt
  • 3 cloves garlic (minced)
  • 1 teaspoon chile paste
  • 1 tablespoon tomato paste
  • 1/2 cup chicken broth
  • 1/2 teaspoon brown sugar
  • 2 tablespoons peanut butter
  • 1/4 cup hoisin sauce
  • Cooked jasmine rice or rice noodles
  • Toppings: chopped unsalted peanuts, cilantro, cucumber slices, thai chile or sriracha

Instructions

  1. Heat oil in a large non-stick skillet over medium-high heat. Add seasoned chicken and cook until lightly browned and cooked through. Transfer to a plate.
  2. In the same pan, add minced garlic, chile paste, and tomato paste; cook until fragrant (about 30 seconds).
  3. Stir in broth, brown sugar, peanut butter, and hoisin sauce; bring to a boil.
  4. Reduce heat and return chicken to the pan. Stir well to coat the chicken in sauce and cook until heated through.
  5. Serve over jasmine rice or noodles and garnish with chopped peanuts, cilantro, cucumber slices, and spicy chiles.
