  • 1 green bell pepper (chopped)
  • ½ cup white onion (chopped)
  • 1 Tbsp fresh basil
  • 1 tsp dried oregano
  • ½ cup Parmesan cheese
  • 14.5 ounces crushed tomatoes
  • 1 Tbsp tomato paste
  • 4 cups chicken broth
  • â…› tsp red pepper flakes
  • ½ pound boneless, skinless chicken breast
  • 3 ounces spaghetti, penne, or gemelli pasta

Instructions

  1. Add minced garlic, chopped green pepper, diced onion, fresh basil, dried oregano, and Parmesan cheese into the slow cooker.
  2. Stir in crushed tomatoes, tomato paste, chicken broth, and red pepper flakes until well combined.
  3. Nestle the boneless chicken breast into the mixture without adding pasta yet. Cook on high for 3 hours or low for 6 hours until the chicken is tender.
  4. Transfer the cooked chicken to a cutting board and shred using two forks.
  5. If desired, add pasta to the slow cooker and cook on high for an additional 30 minutes or until al dente.
  6. Return shredded chicken to the soup, stir well, and warm through for about five minutes before serving.
