  • 16 ounces uncooked penne pasta
  • 1 pound boneless skinless chicken breasts
  • 48 ounces marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded parmesan cheese
  • 1 cup vegetable oil (for frying)
  • 2 cups all-purpose flour
  • 3 beaten eggs
  • 2 cups Italian seasoned bread crumbs
  • Fresh basil (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C). Prepare a 9 x 13 casserole dish with nonstick spray.
  2. Cook the penne pasta until just under al dente according to package directions. Drain and rinse with cold water.
  3. Pound the chicken breasts to about ¼-inch thickness or slice them in half for even frying.
  4. Set up a breading station with flour, beaten eggs, and Italian seasoned breadcrumbs in separate bowls.
  5. Coat each chicken piece in flour, then egg, and finally breadcrumbs.
  6. Heat vegetable oil in a skillet over medium heat and fry the chicken until golden brown (about 2-3 minutes per side). Slice into bite-sized pieces.
  7. In a large bowl, combine cooked pasta, fried chicken, half of the mozzarella cheese, half of the parmesan cheese, and all marinara sauce; mix well.
  8. Transfer the mixture to the casserole dish and top with remaining cheese. Cover with foil and bake for 30 minutes; remove foil and bake for an additional 10 minutes until bubbly and golden.
