  • 4 large potatoes
  • 2 chicken breasts
  • 2 tbsp olive oil
  • 2 tsp paprika
  • 2 tsp garlic granules
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 100 g grated cheddar cheese (1 cup)
  • 1 tbsp butter
  • 2 tbsp chopped parsley

Instructions

  1. Preheat oven to 200°C (390°F).
  2. Peel and cube the potatoes, then toss them in a mixing bowl with olive oil, paprika, garlic granules, salt, and pepper.
  3. Spread the seasoned potatoes in a baking dish and bake for 20 minutes.
  4. While potatoes bake, cut chicken into chunks and season with remaining olive oil, paprika, garlic granules, salt, and pepper.
  5. After 20 minutes, add seasoned chicken and butter cubes to the potatoes; bake for an additional 35-40 minutes until cooked through.
  6. Mix occasionally during baking for even cooking.
  7. Top with grated cheese in the last 5 minutes of baking until melted.
  8. Garnish with parsley before serving.
