  • 400 g dried pasta shapes (rigatoni recommended)
  • 1 tbsp oil
  • 3 large chicken breasts (cut into bite-sized chunks)
  • 1 large onion (chopped)
  • 1 red bell pepper (chopped)
  • 1 yellow bell pepper (chopped)
  • 2 cloves garlic (minced)
  • 2 x 400g tins finely chopped tomatoes
  • 120 ml double cream
  • 100 g fresh baby spinach
  • 100 g grated strong cheddar cheese
  • 100 g grated mozzarella

Instructions

  1. Preheat oven to 190C/375F.
  2. Boil water in a large pot. Cook pasta until al dente, then drain.
  3. In a frying pan, heat oil and sauté chicken until sealed.
  4. Add onion, peppers, garlic, and seasonings; cook until softened.
  5. Stir in chopped tomatoes and cream; add cooked pasta and spinach.
  6. Transfer to a baking dish, top with cheese, and bake for 20-25 minutes until golden.
