  • ¼ cup tomato paste
  • ¼ cup water
  • 2 teaspoons Italian seasoning
  • 4 large bell peppers (various colors, sliced)
  • 1 medium onion (sliced)
  • 2 cups freshly shredded mozzarella cheese
  • Fresh basil (for garnish)

Instructions

  1. Preheat your oven to 375°F. Spray a 9×13 baking dish with cooking spray.
  2. Cut the sausage into 1-inch pieces and brown them in a large skillet over medium heat for about 10 minutes. Drain excess liquid.
  3. In a small bowl, whisk together tomato paste, water, and Italian seasoning.
  4. Combine the browned sausage with sliced bell peppers and onions in a large bowl. Pour the sauce over the mixture and stir well.
  5. Layer half of the mixture in the baking dish, top with 1 cup of mozzarella cheese, then add the remaining mixture on top. Cover with foil.
  6. Bake for 30 minutes covered, then uncover and stir before topping with remaining cheese. Bake for an additional 10 minutes until bubbly.
