  • 4 tablespoons olive oil (divided)
  • 4 cups butternut squash (cubed)
  • 4 cloves garlic (minced)
  • 5 sage leaves
  • 1/4 cup sweet onion (chopped)
  • 16 ounces vegetable broth
  • 1 cup orzo
  • 1/2 cup cream
  • 1 cup mozzarella cheese
  • 1/2 cup parmesan cheese

Instructions

  1. Preheat your oven to 400°F. Toss the cubed butternut squash with 2 tablespoons of olive oil, salt, and pepper.
  2. Spread the squash on a baking sheet and roast for 25 to 30 minutes until tender.
  3. In a large pot, bring vegetable broth to a boil. Add the orzo and simmer for about 10 minutes until tender.
  4. In a skillet, heat the remaining olive oil over medium heat. Sauté the sweet onion and garlic until fragrant.
  5. Add half of the sage leaves, mozzarella, cream, and parmesan to the skillet. Stir until the sauce thickens.
  6. Combine the roasted squash and cooked orzo with the cheese sauce until well-coated.
  7. Garnish with remaining sage leaves and serve warm.
