  • 1/2 head of green cabbage, finely shredded
  • 1/2 head of purple cabbage, finely shredded
  • 2 cups carrots, matchstick-cut or shredded
  • 1 cup fresh cilantro, chopped
  • 1/2 cup sliced green onion
  • 2 cups cooked edamame
  • 12 cup roasted cashews
  • 2 cups crunchy chow mein noodles (optional)
  • 1/4 cup olive oil
  • 3 tablespoons white vinegar
  • 2 tablespoons sesame oil
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • A few shakes of garlic powder
  • Optional: 1/4 cup Greek yogurt or mayo
  • Chicken, shrimp, or any other protein you like

Instructions

  1. In a jar, mix olive oil, white vinegar, sesame oil, sugar, salt, and garlic powder. Shake until smooth.
  2. In a large mixing bowl, combine green cabbage, purple cabbage, carrots, cilantro, green onion, edamame, and cashews. If using chow mein noodles and your chosen protein (chicken or shrimp), add them now.
  3. Drizzle the dressing over the salad and toss gently until all ingredients are evenly coated.
  4. Serve immediately for optimal crunch or chill briefly before serving.
