  • 12 oz pasta (spaghetti, penne, or linguine)
  • 2 tablespoons olive oil (for sautéing)
  • 1 large yellow onion (thinly sliced)
  • 3 cloves garlic (minced)
  • 3 tablespoons olive oil (for chili oil)
  • 1 tablespoon red chili flakes
  • 1 teaspoon paprika
  • 1 small garlic clove (sliced for infusion)
  • 1 teaspoon soy sauce
  • Grated Parmesan cheese (for serving)
  • Fresh basil or parsley (for garnish)

Instructions

  1. Cook the pasta according to package instructions in salted boiling water until al dente. Reserve 1 cup of pasta water before draining.
  2. In a skillet over medium heat, heat 2 tablespoons of olive oil. Add sliced onions and salt, stirring occasionally until caramelized and golden brown (about 15-20 minutes). Add minced garlic in the last few minutes.
  3. In another skillet over low heat, combine 3 tablespoons of olive oil with red chili flakes, paprika, sliced garlic clove, and soy sauce. Let it infuse for about 5 minutes.
  4. Add drained pasta to the skillet with caramelized onions and mix well. Gradually add reserved pasta water as needed to achieve desired consistency.
  5. Drizzle the chili oil over the pasta mixture and toss everything together. Serve topped with grated Parmesan cheese and fresh herbs.
